HISTORY
The Estate was created in 2008 by Vincent Legou, taking after his parents.
Since the beginning, Vincent has chosen to cultivate his vines in Organic Farming. In 2014, all vineyards in the estate are organically certified.
Vinification is also rigorous to avoid the use of too many inputs: little sulfur, indigenous yeasts, long maceration, barrel aging between 12 and 14 months.
Today, we operate 11.5 hectares of vineyards, spread over the Côte de Nuits and the Côte de Beaune, in Burgundy, Bourgogne Aligoté, Bourgogne Hautes Côtes de Nuits, Beaune, Beaune 1er Cru, Ladoix, Vosne-Romanée and Gevrey Chambertin. All the wines are vinified, aged and bottled at the Estate, in Nuits SaintGeorges.
SOIL
Our plots are located on the Côte de Nuits and the Côte de Beaune, at an altitude of between 200 and 400 meters above sea level.
The soil is clay-limoestone, an optimal soil for the cultivation of the vine, which allows to have wines of an elegance.
cultural methods
To optimize the quality of the wines, I take special care at each stage of the vine and in particular at the essential stages of pruning, disbudding and leaf stripping.
My goal: to obtain healthy and perfectly ripe grapes. That’s why I do not use any chemicals and advocates tillage.
Vignification methods
For all our vintages, the harvest is done manually. It is first sorted to keep only mature and healthy logs.
The vatting is long, marked by a period of maceration before fermentation to bring more roundness and fruity to the wine. This wine is aged in barrels for nearly 12 months.
